Summer Slushie Fun

Kids love slushies as they really are very refreshing on a hot day. A really healthy way to make slushies that are not full of sugar is to place some frozen berries in a blender with lots of ice and some coconut water. They taste sweet and yummy but are not full of the bad stuff.

Slushies are not just for kids. Try this recipe that is ADULTS only that could prove very popular at your next party or get-together.




1 litre water

2/3 cup caster sugar

1 cup mint leaves

½ cup lime juice

2 tbsp white run (plus a little extra for serving)

1 tsp finely grated lime zest


Place sugar and water in a saucepan over high heat and stir until sugar dissolves. Bring to boil then remove from heat and allow cool for 15 minutes.

Add the mint leaves and infuse for 15 minutes.

Strain into a bowl and stir in juice, run and zest.

Pour into a lamington tray and freeze for at least 5 hours. Use a fork to crush it up every hour or so as this stops it from just becoming one big ice block.

Allow to soften for 20 minutes before serving and add a dash of extra rum!
