DELICIOUS STRAWBERRY AND ORANGE SORBET
A fresh fruit sorbet is the perfect treat for a warm day and with Autumn seeming to not want to make its appearance, this is perfect to make now. This dairy free version is easy to make with or without an ice cream maker.
4 cups Strawberries (washed and hulled)
1 cup fresh Orange Juice
zest from the orange peel
½ cup of caster sugar
1 cup of water
In a medium saucepan, add the sugar, juice and water. Bring to boil and allow to cook for about 3 minutes until the sugar has melted.
Add the strawberries and orange zest and gently simmer for 8 minutes.
Remove from heat and allow to cool to room temperature.
With a stab blender, blend until the mixture is nice and smooth. You can pass it through a sieve if you want to remove any small pieces, but it is perfectly fine to leave as it is. If you have an ice cream maker you can use it finish the freezing process. You can also place the mixture on a baking tray and freeze for one hour. Use a fork to mash it thoroughly and return to the freezer until firm.
